There are many types of vegetables that taste great when grilled; yet many people don't know exactly how long to grill them to achieve the best flavor. Grilling vegetables isn't that hard to do, so long as you follow a few key principles.

First, always remember that the grilling time should be calculated based on the weight of your vegetables. For instance, tomato slices cook quickly because they are light, whereas a whole potato would require more time to ensure that the middle is cooked as well as the outer flesh.

You should also consider your heat. Are you trying to cook your vegetables over low, medium or high heat? It's much easier to cook vegetables over low or medium heat, and one should never cook them over high heat unless searing them. This would result in burnt and rancid food that isn't very palatable.

If you can cook vegetables in an oven, then you won't have any problems grilling them in your grill. Simply place your vegetables on the grill, close the lid and let them cook slowly. If you like seared vegetables, then you should sear them before lowering your temperature. You can determine the proper time by checking for doneness, or by following the recommend minutes a recipe calls for when cooking in the oven.

If your grill has a thermometer on the lid, then achieving the proper temperature will be easier to do than if you are using a grill without one. To lower your temperature, simply remove some coals or lower the flame if you're using a gas grill. To increase your temperature, add a few charcoal briquettes or increase your flame if you're using a gas grill.

Once your vegetables are near done, you can enhance the flavor more by brushing an oil sauce on the food. An oil sauce consists your favorite spices steeped in olive or safflower oil. Once you have added your sauce, let your vegetables cook until done, remove from the grill and enjoy while still hot and delicious!

By remembering these simple rules, you'll be able to grill any type of fruits or vegetables without having to refer to a chart that may not be suitable for your grill. Try to achieve the proper temperature as the recipe calls for, close your grills lid, and cook for the same number of minutes that the vegetables would require for oven cooking of the same temperature.
